How Long Do Leftovers Last?
Cooked leftovers keep for 3–4 days in the refrigerator and 3–4 months in the freezer. After that, quality declines and the risk of bacterial growth rises — even if the food still looks fine.
The 2-Hour Rule
Perishable food must not sit at room temperature for more than 2 hours (1 hour if the room is above 32°C). Bacteria multiply fastest between 4°C and 60°C — the "danger zone". Refrigerate leftovers promptly after serving.
How to Cool Food Fast
- Divide large pots into shallow containers (max 5 cm deep) so they cool quickly.
- Do not wait for food to cool to room temperature before refrigerating — get it in the fridge within 2 hours.
- Use an ice bath for soups and stews if the pot is very large.
Reheating Leftovers
Reheat until piping hot throughout — 74°C or above for meat and poultry. Soups and sauces should come to a rolling boil. Only reheat once: each reheat cycle gives bacteria another chance to grow, so portion out what you need.
Container Tips
- Use airtight glass or BPA-free containers — they keep moisture in and fridge odours out.
- Label with the date so you know what to eat first.
- Frozen leftovers thaw best overnight in the fridge, never on the counter.
